Beat together eggs, salt, and oil in a small bowl
Combine the flours on a flat surface.
Create a well in the flour and add egg/oil/salt mixture.
Mix until the ingredients are combined. Starting with a fork, then a pasta knife.
Knead the dough on a floured surface for about 10 minutes. The dough will be smooth and elastic.
Rap the dough in plastic wrap and let it rest for 20 minutes.
Divide the dough into six sections.
With each floured section, flatten with your Kitchenaid pasta attachment.
Change the Kitchenaid pasta attachment to the pasta cutter to cut the dough.
Boil the pasta in a pot of salted water for about 2-3 minutes or until it is al dente.
