Italian Meatballs

Ingredients

  • 1.5 lbs Ground Pork
  • 1.5 lbs Ground Beef
  • 1 cup Parmesan Cheese
  • 1 cup Italian Breadcrumbs
  • 1/8 cup Fresh Italian Parsley chopped
  • 2-3 eggs
  • 1 tablespoon garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1-2 pinch Ground Cayenne Red Pepper OPTIONAL

Instructions

  • Combine all ingredients in a large bowl. Mixing together with your hands. Do not overwork.
  • Cook a bite-size amount in a skillet to test the taste. Add more seasoning if needed. If it doesn't taste good, it is probably missing salt.
  • Preheat oven to 375.
  • Shape Meatballs into the desired size. Placing them on a lined cooking sheet or pan.
  • Cook in the oven 20-25 minutes. (internal temp of 160)
  • Transfer meatballs to tomato sauce and let simmer for 20 minutes.

Notes

This is a double recipe. I always make enough to freeze half for the next time.
