Ingredients
- 1 lbs Italian Sausage
- 1 onion
- 1 tbsp minced garlic
- ½ cup dry white wine
- 1 pound fettuccine cooked and drained
- 2 cups whipping cream
- 1 cup Parmesan
- ½ bag baby spinach leaves
- cracked black pepper to taste
Instructions
- Cook sausage, onion, and garlic in a stockpot over medium-high heat until the sausage is thoroughly cooked. Stirring frequently. Drain excess fat. Returning the sausage mixture to the pan.
- Stir in wine. Bring to a boil. Reduce heat to medium and cook until most of the wine is cooked off. About 4-5 minutes.
- Add cheese and cream; bring to a boil, stirring constantly. Cook and stir for 4-5 minutes until the cheese is melted and the sauce is thickened.
- Remove from heat, stir in pasta and spinach.
- Cover and let stand for 3 minutes.
- Season with pepper to taste.

We like to use hot Italian Sausage but you could use any pork sausage.
