Chicken Lettuce Wraps

Ingredients

  • 1 tbsp olive oil
  • 1 pound ground chicken
  • 2 tsp garlic *We love garlic and use 1-2 tbsp
  • 1 diced onion - white or yellow
  • 1/4 cup hoisin sauce
  • 1 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp shao xing wine or rice wine vinegar
  • 1 tbsp freshly grated ginger
  • 1 tbsp Sriracha This is optional.
  • 1 can 8oz Water Chestnuts, drained and diced *I finely dice.
  • 3 green onions Thinly sliced.
  • salt and pepper to taste
  • 1 head butter lettuce

Instructions

  • Heat oil over medium heat.
  • Add Ground Chicken and cook until brown. Make sure to crumble the chicken as it cooks.
  • Stir in garlic, onion, hoisin sauce, soy sauces, shao xing wine, ginger, and Sriracha. Cook on medium until onions are translucent.
  • Stir in water chestnuts and green onions. Cook until tender, about 2 minutes.
  • Taste. Add salt and pepper if needed.
  • Serve chicken mixture on a lettuce leaf. (like a taco)
