Whether you’re making them for burger night or just need a snack fix, these fries will have you skipping the drive-thru for good.
Recipe Tips and Notes
- Potato Prep: Cut the fries as evenly as possible for consistent cooking. Think somewhere between a shoestring and a steak fry.
- Soak + Dry = Crispy: Soak your fries in cold water for at least 30 minutes, then pat them really dry—this step makes a huge difference in texture.
- Cornstarch Trick: Don’t skip it. The cornstarch adds that signature crispy coating, especially helpful when air frying.
- Tray Rotation: If your air fryer has trays, switch them halfway through to ensure even cooking. If you’re using a basket, shake it well.
- Batch Cooking: Making a double batch? Increase cook time slightly and work in batches to avoid overcrowding.
- Seasoning Shortcut: Double or triple the fry seasoning and store it in a mason jar—it’s also great on roasted veggies or chicken.
- No Air Fryer? Bake at 425°F on parchment-lined sheets for 30–40 minutes, flipping halfway through.

Ingredients
- 4-6 russet potatoes
- 3 Tbsp olive or avocado oil
- 2 Tbsps cornstarch
Fry Seasoning
- 1/2 tsp brown sugar
- 1/2 tsp sugar
- 1/2 tsp salt
- 1/2 tsp coarse black pepper
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Instructions
- Cut 4-5 large russet potatoes in fry shape.
- Soak and rinse in cold water.
- Dry off the potatoes.
- Add cornstarch and oil. Stir to coat evenly.
- Air fry* on 2 trays at 400 degrees for 24 minutes. (More Fries might need more time.)
- Switch the top and bottom racks halfway through the cook time.
- After 24 minutes, remove from oven and toss in the fry seasoning.
Notes
You can use an oven if you don't have an air fryer with racks.

- Change the seasoning measurement to 1/4 cup each and store in an airtight mason jar.
