Homemade Pasta Noodles

Recipe Review
I have been making my own pasta for a couple of years. Starting with an inexpensive hand crank pasta maker. Once I knew this was something I would not give up, I purchased the Kitchenaid Pasta Making Attachments. What girl doesn’t love her Kitchenaid Standmixer?!? And I promise you will love it more when you invest in additional attachments.
Just get started. If it is too dry, add some olive oil. If it is too moist, add more flour.
Cover with more flour if the cuts are cutting only some of the way.
Equipment
- Kitchenaid Pasta Attachments Optional, I started with a hand crank pasta maker.
Ingredients
- 1 cup 00 Flour
- 1/2 cup semolina flour
- 3 eggs
- 1 tbsp olive oil
- 1 pinch salt
Instructions
- Beat together eggs, salt, and oil in a small bowl
- Combine the flours on a flat surface.
- Create a well in the flour and add egg/oil/salt mixture.
- Mix until the ingredients are combined. Starting with a fork, then a pasta knife.
- Knead the dough on a floured surface for about 10 minutes. The dough will be smooth and elastic.
- Rap the dough in plastic wrap and let it rest for 20 minutes.
- Divide the dough into six sections.
- With each floured section, flatten with your Kitchenaid pasta attachment.
- Change the Kitchenaid pasta attachment to the pasta cutter to cut the dough.
- Boil the pasta in a pot of salted water for about 2-3 minutes or until it is al dente.
Notes
You can use all purpose flour.
You can use a different pasta maker. I started with a hand crank pasta maker. Once I feel in love with making pasta, I invested in the Kitchenaid Pasta Attachments.
